Salmon Tacos with Mango Salsa

What’s better than a savory stuffed salmon taco? Two of them! With fish as your lean protein, taco shells as an excellent source of grains, and mango-avocado-pepper stuffing that checks your fruits and vegetables boxes, you’ve got all your food groups covered. Give this mouthwatering crowd pleaser a try.

Salmon Tacos with Mango Salsa

Ingredients:

8 corn tortillas
1 lb. fresh salmon
2 tbsp. olive oil
1 tsp. chili powder
1 tsp. garlic powder
salt to taste

Mango Salsa:

1 ripe mango, diced
1 avocado, diced
1/4 red onion, diced
juice of 1 lime
1 bell pepper, diced
1 jalapeno, diced
salt and pepper to taste
optional chopped cilantro for garnish

Directions:
  1. Preheat oven to 400°F.
  2. Place salmon filets in a baking pan. Whisk together olive oil, spices and salt in a small bowl. Pour the marinade over the salmon.
  3. When oven is heated, bake salmon for 15 to 18 minutes or until the internal temperature reaches 145°F.
  4. While the salmon is cooking, make the salsa by combining all ingredients in a medium bowl.
  5. Once salmon is cooked through, remove it from the oven and set aside. Warm the tortillas in the oven or on a pan and place them onto four plates.
  6. Flake the salmon with a fork and distribute evenly onto each tortilla shell. Top with mango salsa and optional cilantro.
  7. Enjoy!
